What to Eat on St. Croix: A Crucian Food Primer

Crucian cooking is what happens when West African technique, Danish trade, Puerto Rican neighbors and down-island family lines share one small island for three centuries. It is not resort food. Here's the working vocabulary, so the menu reads like an invitation instead of a quiz.

The core dishes

Kallaloo — the island's soulful greens stew, slow-cooked with okra and usually seafood or salted meat; a holiday essential and a point of family pride. Johnny cakes — fried dough, crisp outside and tender inside, eaten plain, split with cheese, or alongside anything. Pates (PAH-tays) — fried hand pies of seasoned beef, saltfish or chicken; the island's true street food. Saltfish — salted cod, rehydrated and stewed with peppers and onions, a legacy of the trade routes that fed the plantations. Fungi (FOON-jee) — soft cornmeal with okra, the traditional partner to boiled fish. Add seasoned rice, plantains in every form, and roti brought north by Trinidadian families, and you can navigate any local menu.

Drink like it's December

Sorrel — the crimson hibiscus drink spiced for the holidays — floods the island around the Crucian Christmas Festival. Bush tea is the everyday herbal habit; maubi, the bittersweet fermented bark drink, is the acquired taste locals will grin about handing you. The rum, of course, gets its own guide.

Where to actually eat it

The purest single stop is La Reine Chicken Shack mid-island: spit-roasted chicken, johnny cakes and Crucian sides, open-air and cash-friendly. Villa strategy

Have the concierge's private chefs cook one Crucian dinner at the house — kallaloo done properly is worth building an evening around — and keep pates in the refrigerator for beach days. Your group will fight over the last one; provision accordingly.
